Favorite beers to cook with

Haven't done much of this. What beers have you guys cooked with?

Thinking of a braised lamb shank or something like that.

Porter. Goes perfectly with lamb shank, rosemary and onions.

+1 to porter. Ive also had a Rootbeer brased lamb shank that was amazing. If i ever need alittle more liquid for whatever Im cooking I usually just pour alittle of what ever beer Im drinking at the time in insead of water. Its usually some sort of porter, ipa, or stout..

My wife sometimes puts Sierra Nevada Pale Ale in some of her recipes (usually soups). Pretty good

However, we once used Dogfish Head 90 minute IPA and it was pretty bad. Added a bitter flavor.

Guinness and spotted cow. Most Stout and Porter have big enough flavor to go with lamb.

I've actually had some good results with sauteing beer and vegetables.

I don't have much of a beer selection but when I do cook with beer I do soemthing like a Rickards red in a beef stew or an indian pale ale with white fish

Old style (before they changed the recipe...though I doubt it is any different now).

works great for things like beer breads where I found heavier or more flavorful beers made it taste goofy. I have also had some other beers behave strangely when being used for cooking something like onions and brats (it will start to caramelize).

Guinness roast in the Crock Pot is dead simple and always a hit.

I cook a lot with Guiness and PBR. Other than that, I stick to wine.

Porters or Stouts. Guiness is a restaurant favorite. I think Left Hand Milk Stout would make a kick ass braising liquid.

Guiness typically but for food that requires something less rich (making Arroz con Pollo with Guiness would be weird), whatever lighter beer I have on hand. PBR, Corona, Red Stripe, whatever.

I am not much of a chief but I do like to make baked goods from time to time. I have not yet tried to bake with beer but after drinking a bottle Samuel Smith Oatmeal stout I think it would make for a great ingredient in a baked good.
