Let me try and dumb it down for you.

Just like you have YOUR standards, vegetarians have their own standards where killing an animal is not the same as killing a plant.

In nature, this is referred to as a symbiotic relationship. The story of the gray wolf in Yellowstone National Park is a prime example of this.

The ethics behind CAFOs and animal cruelty is a whole other issue. However, just because you eat meat does not mean you support this unsavory treatment of animals. The responsible thing to do is find a reliable source, and support producers who do practice an ethical and more "natural" treatment of their livestock.

Our not eating meat does not equate to us allowing every mammal to flourish. The fact of the matter is that species (like various fish) are going extinct at a very alarming rate because of our rapid pace of consumption. I agree with you on finding sustainable/ethical meat produce. The problem is that given the population of the planet, if everyone starts to eat meat its just impossible for the production of meat to be sustainable.

All of this being said, I do think that purely from a health perspective, having some meat is probably good for you.

Mind you, if everyone ate grains for 90% of their kcal there would be a population boom to the point where we'd be in exactly the same boat.

My fiance has been a vegetarian for about 6 years and I gave it for lent last year and haven't had any meat since. It is really much easier than I thought it would be... Fried chicken still smells good some days!

At that point, I will start eating meat

On a similar note, came across this talk on TED. A little creepy but fascinating none-the-less:
