Help me cook pheasant

A hunting trip has left me with ~20 pheasant breasts. Most are getting vacuum sealed and frozen, but I have the chance to try out some different recipes. Think I can bootleg sous-vide it like in the video? I don't have the carcasses, just the breasts. I'd love some ideas for how to cook and serve the pheasant. I'll prob try a few recipes until I find one that I like, then cook it for a dinner party. As always, thanks for the input.

Haha, it was a successful trip. We didn't want this many but the host insisted.

Cook it gently. If they are small/young, which is optimal, leave them slightly pink inside. If they are tougher, braise them or make a pie.

I've never had a pheasant ruined by an orange sauce.
