They don't, asshole. I had it stored like that only temporarily. I usually store my fish in the position they swim, but this was over 4 pounds and I hadn't a container large enough to keep him in.


Is there a reason other than esthetics?

Storing fish on their sides on ice can indent the flesh, so that's why I usually keep them upright.

that is a damned handsome photo
although if you are going to trim it like that, why not scrape the bone?


I cut off a little of the fat on the bone, and then realized I was going to serve it without the bone, so I just didn't bother.
