i'm not so big on homemade buns and mayo, though, of course, i probably should be. as a cook, my philosophy is that if i can buy a good version of something, it's rarely worth my time to make it from scratch to get a version that's 10% better. In the US, we have Hellman's/Best Foods mayonnaise that is perfectly good for hamburgers (especially if you spike it with a little chipotle puree). And there's a bakery near me that does good buns. The one thing I do insist on, though -- as long as i'm being a hamburger hard-ass -- is crisping the bun before serving. That little bit of texture is absolutely vital. and this post is worth a double-foo.gif

Hi prefer best foods to homemade for a number of things, hamburgers included. Other times homemade is better. Just depends on what you want. I don't home make buns. I really like burgers on sliced bread as well.

Fair enough. I can't source any good buns, so the difference to homemade ones is tremendous. For mayonnaise, I suppose, one can even prefer the taste of conserved one since it's so different. Anyway, whipping it up is probably quicker than picking up the mayonnaise from said stores. satisfied.giffoo.gif

This mayo is quite good. Most mayo's here contain a lot of sugar. The most popular brand has 3.5%, if I'm not mistaken... frown.gif
Most gherkins are called sweet-and-sour, but are way too sweet as well. These cornichons are sour - great!

I've had fantastic housemade gherkins/sour pickled cornichons at a Deli in Berlin (Mogg & Melzer), along with some great cole slaw and Reuben sandwich. The chicken liver brulée is fantastic too. And the bread!

I also have to admit that I haven't really tried conserved mayonnaise. I've had the Kraft Miracel Whip stuff, some other Kraft, Knorr and Thomy stuff. None were really good. My favorite is probably Mc Donald's mayonnaise (not kidding) produced by Develey. Those weird diluted "Salad mayonnaise" type sauces are pretty decent, comparatively, too. And often better than their regular counterpart (for example by Knorr).
I don't really make mayonnaise at home often either, and if I do, it's mostly some sort of aioli.
