Why would you place the food in separate thirds to begin with? To take a picture? Lol.

Since you seem to take a great interest, here's the process:
You sweat onions and caraway seeds, then you add blanched swiss chard, chickpeas and tomatoes. Since you add all of them in one go, it makes no difference whether to just dump them on top of each other in the middle or dump then in one third of the pot. The latter might actually make folding the stuff together easier, and yes, it makes the ingredients for a picture--albeit crappy picutre--more discernable. The second picture wasn't taken after the folding together part but after a further 30 minutes of simmering.

I feel sort of rustic when I buy a whole fish that I have to gut and scale myself. I have never, ever bought bird with feathers, head, feet and beak still on.

That's really the only way you can get woodcock. A bit of work with the feathers, but I find it enjoyable. My mom did freak out when she saw them hanging in the fridge.

woodcock would be tough, because they are such beautiful birds. i did help a friend prepare them a couple of times. my latest encounter was with an uneviscerated goose. it was very silence of the lambs, opening up the cavity, then sticking my hand in, running knuckles against the ribcage, gripping innards and pulling them out with a twist. i have a whole new respect for jack the ripper. icon_gu_b_slayer[1].gif
