That looks like a debuyer, if so it would have been bare steel when new.
How did you season it so well, nobd?

Yeah, like Tom said, it looks like Debuyer, which is unseasoned when new. Over time, it gets a seasoning on it that looks like that and becomes effectively non-stick. You can make an omelette or flaky fish in it no problem with that kind of seasoning.

Yep, I'm working on mine right now. Started well, then some parts of the seasoning just flaked off. frown.gif
Have a look at De Buyer's Force Blue pans. But IIRC, NOBD's is iittala.

Yes, it started like these:

And it's de Buyer. (The other pan is ittala.) I seasoned it with salt and oil, I think, yeeeaaarsss ago. It gets blacker with use.
