pigeon jus, onions cooked with cumin, wrapped with potatoes. The recipe calls it a "crousti-fondant." The potatoes get crisped up to serve, and then you have the soft onions on the inside.

Ha, no. That was at Daniel. Below it is sea buckthorn: tart berry -- very nice flavor. They were poached in a light syrup with some chili, then added to a sake beurre blanc to go with the abalone.

By the way, those wood ear mushrooms I posted are just absolutely horrible.

last time i had abalone at Daniel, it was in the style of rubber band. That was maybe 4 years ago and also the last time I had abalone at Daniel.
