Well, that was not the case. I let it cook/simmer for overall 5-6 hours (including reduction of wine and milk). Overall, I spead the process up in the end (skimmed off the sauce and reduced it). Was just way too much for a 28cm cocotte. Or, alternatively, I have to give it 12 hours+. Anyway, tastes great to me. And I can identify all the veggies.
