Simple tasty vegetarian snacks:
- raisins
- nuts
- peanut butter on celery sticks (imo)
- chocolate bars (moderation)

Lastly, don't forget about natural fruit juices.

Vegetarian vs. meat arguments....

Sticking to the OP's question, I really don't like snacking. It is a surefire way to lose track of your daily intake. But anyway, the kinds of things that I would consider are: nuts (almonds, walnuts, etc. in moderation - these are extremely calorie-dense), rice cakes (delicious, low in calories), spoon of peanut butter of almond butter, a fruit, etc.

good quick dinner or something you can take for lunch or have as a snack if you make ahead (what i had for dinner tonight): Lentils with yogurt sauce.

Cook lentils (you simmer them for about 30-40 minutes, just follow the directions on the package). When done, toss in fresh or frozen spinach and let it wilt (if there's a lot of water left in your lentils, drain first then toss spinach)

For yogurt sauce: I have a good, pretty liquidy yogurt styled as bulgarian-style. Use any good tart plain yogurt like greek yogurt. Add to taste in whatever combo you want: cumin, tumeric (half as much as cumin), paprika (i like smoked but regular is good too), pepper, a bit of salt, some red pepper flakes or ground chili, garlic (raw or cooked). Basically add whatever spices you like. If your yogurt isn't very tart some lemon juice is good. Top off with a healthy dose of chopped fresh mint. Combine sauce with lentils. Salt to taste. Eat.

This takes only as long as it takes to cook the lentils (good idea to make the yogurt sauce at the start and either refrigerate or let sit out, so the flavors meld). You get some veg, protein and fiber. Seems like a pretty balanced meal to me.

FYI I am not a vegetarian. I love meat. But I try to not eat a lot of meat (one meal a day at most, and often less) and when I do I try to eat as high quality, local, grass-fed/pasture-raised/wild etc. as I can find. I respect vegetarians--I just love food too much to go that route.

Check out Mark Bittman's How To Eat Everything Vegetarian. It will have tons of recipes (snacks and otherwise) for you to follow.

my work day snacks are usually along the lines of: banana pumpernickel or multi-grain pretzels dried seaweed snacks granola bars any type of dried fruit or dried vegetables are good too. this site is a great resource also for meals, snacks etc.: http://www.nomeatathlete.com
