I may be off base, but I don't think that Gene Hackman gets as much credit as I think he should.
Also Christopher Reeves - in the Superman movies he was plain vanilla, but in Deathtrap he was damn good. So was Michael Caine.

Underrated Movies (IMHO):
The Princess Bride
Rosencrantz & Guildenstern are Dead (wholeheartedly agree on G. Oldman)

I don't know if he is underated but Paul Bettany is one of the best actors working at the moment.
I think I will be ridiculed for this but I personally think Vince Vaughn is an excellent comedy actor,I think the problem is that some of the parts he takes are not written to bring out the best in him.

His autobiography is called, of course, Kinski Uncut. And in it he says:

Jonglover, I just saw Yi Yi a couple months ago. Fantastic! Memories of Murder, a Korean film, is also pretty underrated. I like that one a lot.
