4lbs cubed pork butt, now what?

so i was going to make kielbasa but it turns out the meat grinder doesn't have the bit at the end keeping the augur from slipping so I can't grind the meat, OR stuff the sausage...

Meaning I have slightly less than four pounds of pork butt that's been cubed. What should I do?

Use a blender to grind the meat.

It's basically pork cooked in its own fat until it is melting, then you eat it like a pate. i am not sure there is one bit of difference between it an carnitas other than seasoning and finishing. Carnitas is generally fried in the fat at the end.
