Quinoa

I've read that quinoa is some sort of superfood. How accurate is this? Who eats it, what do you make with it, and do they carry it at most supermarkets?

In my experience it's a tad bitter when eaten plain, but it absorbs sauce very well. Supposedly a low glycemic carb that won't spike insulin levels, also contains a variety of amino acids making it a fairly complete protein source, which is rare for non-meats.

i could give a sh*t about its supposed superfood qualities, but it is delicious if it's prepared right. the trick is rinsing it really, really well (it has anatural coating of saponin that gives the bitter taste), and then toast it in a dry pan. Then add the water. delicious.

Thanks for the tip about toasting it. The stuff I get is supposedly pre-rinsed, but I'll try rinsing it out more and toasting.

why do you always like the weirdest version of things? In Berkeley they prepare quinoa with toe cheese and a side of pit hair. I hear it is a delicacy. Haganah raves about it.

We made risotto using quinoa recently. I actually prefer it as it was much lighter.
