they are nice functionally but i prefer the look without them. shoulders on my old bcdr just looked so sharp and clean.

Below are the measurements of a size small Burberry Brit Harrington Jacket that I think it fits me well and my body measurement, I am about 5ft9 (175-176) and 145lbs

I ask to knock off 0.5" to the body and sleeve length as I am afraid that the jacket may come out too long.
Right now I am still deciding whether I should choose Lamb or goat. Also, I would like to go for all black hardwares and zippers, which I think its pretty cool.

Taking off 5 inches in body length would be disastrous.
To be completely honest, you probably have zero experience with sizing jackets for people, while Charly at TOJ has done it for a couple of hundred guys.
Don't doubt his recommendation. If your measurements are correct, the jacket will fit as intended.
