They're not particularly labor intensive or difficult steps, though sometimes it requires constant thread changes and stuff, they run faster if you have a bunch of nearly-done jackets and then touch them up at the end. It's like making a bunch of white cakes, frosting them all with the same icing, and then doing the individual decoration last.
3 people have to work on those TOJ1's - two people make the two separate shells - one guy is normally a suit tailor but makes the cotton side of the TOJ1, and then the wool and leather side needs a heavier-duty sewing machine. 3rd person does the patterns and cuts the pieces.
