Given the sad state of Champagne in China, I am grateful that my friends lugged some nice stuff across the world for me.

We'll start with a Philiponnat Royale Reserve NV. And then the star of the show. a Billecart Salmon Cuvee Elisabeth Salmon Rose 2000.

Will probably be out, so whatever bottle they are selling, not expecting much. If for some reason we are at home, I'll pop a bottle of Pol Roger rose I have had in the fridge for awhile.

Whatever I'm pouring for the rich dickheads that come to the restaurant, I'll be "borrowing" a glass or 5.

A smile, and seeing double.

Seriously though, our clientele is very well-informed and 95% of the time they are truly a joy to serve. But I'm pissed I have to work til 5 AM on NYE.

Hopefully we'll end up somewhere with something decent this year, but if this turns out like recent years past, we'll make some last minute plans to go somewhere where the toast is something closer to sparkling drain cleaner than champagne.

Something that I already have here, so either a 2000 Piper-Heidsieck or a NV V-C Rose.

I'm not sure yet, I'll pick up something tomorrow maybe. Thinking about a Taittinger Comtes de Champagne ('98 or '99), vintage Delamotte, or maybe Cristal if I'm feeling baller.
