I am looking for a: plain white (or light color) long sleeve v-neck or some other shirt with a sunken collar undershirt (or shirt, so long as the material is thin) I want this to wear underneath a button down shirt cause it is cold here. I looked at a bunch of stores, most of the stuff they had failed under one or more categories, too thick, not plain, etc. I can't believe I am having such trouble finding such a shirt, where can I look so I could buy some?

Any thermal style shirt like a heattech or outdoorsy brand. Most will have collars that will be hidden under your shirt. And if you are wearing a tie then you have limitless options.

I'm in Toronto too. It's not the arms that get cold, so it's more about the material than whether it covers the arms or not.

I've thought to do this, not because of weather, but to avoid that look of seeing a short sleeve under a dress shirt sleeve. Especially a thin white dress shirt.

May I suggest you wear twill dress shirts in Winter?

m0851 in yorkville has some really nice ones with a wider round collar and a slightly stretchy material, the absolute best bottom layer I've found here in TO for wearing under slim dress shirts, retail is a bit expensive though but you still have boxing day.
