Saute garlic, onion, carrot, celery (really whatever aromatic stuff I have) take a can of white beans, rinse it off, throw in the pan, stir, grate some Parmesan when done, meal for about $1.50.

Cheapest meal with meat is probably Keller's roast chicken.

If you're talking about the Keller recipe from Bouchon, that could also be the easiest one to make. All you do is truss the bird, season with salt and pepper, and cook. The recipe may as well read, "To make roasted chicken, simply roast a chicken." But it turns out great.

Mashed up pinto beans with jalapenos and salsa. Not really delicious, but I eat it at least twice a week.

Migas - I usually have eggs, milk and tortilla chips around. If you have cheese, onion, salsa, garlic, sriracha, mushrooms, etc., all that can be used too.

I like to make black beans and rice and then put a fried egg on top for a fast, cheap, filling lunch.

Salad, if you buy lettuce by the head, can be really cheap with nuts, cheese, other veg, and stuff.

Beans with dressing (usually black or garbanzo).

I like my aglio e olio with bread crumbs.

Salsa fresca is pretty cheap, considering serranos and jalapenos are like five cents a pepper.

I sometimes just eat refried beans straight up (sometimes I don't even heat it![does pulling a tab count as preparation?]).

I also remembered one I sometimes make at home. Grate a small potato, chop up some onions and peppers, and cook in olive oil like you would any other hashbrown, and when they're almost done, mix an egg into them. If you like hashbrowns, you'll like the added protein version.

I make a quick bean soup/ chilli. Canned Black Beans with some kind of mexican blend usually, I then mix these with a can of rotel tomatos, again some kind of fiesta blend of sorts. This is like 3-4 servings probably and very taste and fulfilling.

Then the classic Spaghetti Carbonara.. I go to my mum's home over lunch and whip this up... for free. So kind of cheating but still cheap

Quinoa mixed with coconut oil, 2 cups of chickpeas, sweet peas, lots of steamed broccoli, and topped with a pile of lettuce.

I buy quinoa in the bulk section but put down the code for millet (which is .50 cents per lb). Chickpeas I also buy in bulk and cook in a crockpot and freeze in bags. Peas and broccoli are frozen and from Trader Joe's.

This meal is like $2, mostly organic, and 800 calories. Sometimes I'll use an avocado.

Crockpot + beans is where it's at. (And also thieving.)
