My favorite offal ever is dulet, an Ethiopian dish of kidney, tripe, and liver served raw. And if I ever see cervelle du l'agneau dans beurre noisette (lamb's brain in brown butter sauce) on the menu at a French restaurant, I always order it. Incredibly rich, but so delicious.

Had chicken livers Indian tandoor style was excellent. We had booked the restaurant for our party and the organizers had ordered stuff not usually on the menu. Really good. Also had lamb brains cooked in Indian spices in Dubai. Client of mine took me out to drinks and dinner. He got me throughly drunk before taking me for dinner. It was really good that I had second helpings even though I didnt know what I was eating. My client didnt tell me what I had till the next morning. Nice guy too, he also brought aspirin just in case. +1 to chicken livers yakitori style.
