It was great. Made it with a traditional blood thickened poivrade sauce and with chestnuts, baby apples and wild mushrooms. We try to do something different and fall like each year.

I generally agree with the previous posts.

And I only have Turkey once or twice a year.

Yesterday was one of those times since I wasn't the one putting out the holiday spread, but I did eat it.

It was traditional as could be. Turkey, dressing, cranberry, gravy, ham, vegetables and pumpkin and pecan pie along with other deserts.

Really, too much food and a bit boring. But since I didn't do any of the work ( other than bringing a pie ) and it only happens this once a year, it was all right.

We served two birds, neither of which would be familiar to most Americans at Thanksgiving.

One was a Bourbon Red from a farm in Westport. Salt water brined, butterflied and roasted outside in a refractory. The gamier flavor and texture, in my opinion, from these old heritage birds are superior to the broad breasted whites that fill every shelf. If you hate turkey, it's worth a shot.

The other was a goose. A bit of the rendered fat was used for some parsnips, but I'm ashamed to say most of the fat was thrown out.

We're preparing a traditional Thanksgiving turkey dinner today because that's when we could gather all of my in-laws, who are coming down from Wisconsin and the far northwest suburbs of Chicago.

On Thursday, my wife and I went to a hotel restaurant - I did do the turkey thing but she had a very nicely-done pork chop.

Wife is vegan and I'm a vegetarian -- so we had Tofurkey. It was our first time trying Tofurkey, and it was surprisingly good. Had a friend visiting from the UK who was rather impressed with it, too. And to make up for the lack of meat, we had 4 different pies.

Bravo! We had turkey as well. One hour of brine per pound worked beautifully. I eat turkey once a year. No need to purposely make something different.

Had very moist turkey because it was brined properly and after carving, it was doused with chicken broth before serving. But also had crab and stuffed squid.

I used foodguy's dry brine method and it was by far the easiest turkey ever cooked. Everyone seemed to love it and there wasn't a dry part in it. I eat turkey once a year - I kinda like traditions like that actually.

I'm sick of thanksgiving type food (college). Had Chinese/Greek. Maybe I won't go back.
