Braised Turkey Legs

Wanted to try something different this year. Removed the leg and thigh and cooked them separately. Braised the legs in broth, red wine, carrot, celery, onion until falling off the bone. removed the meat from the bone, then simmered the dark meat in the braising liquid. Red pepper flakes to give it a kick. This will be standard procedure for turkey. May skip the white meat.
