Duck is great. A terrific design of nature. Enough fat on one bird to confit two legs, plus the carcass left over to make a sauce. It's a self contained dinner that even comes with its own cooking element.

Is there anything it can't do?

Don't forget that you can use the liver for appetizers as well

one of my neighbors makes a duck truck run to hudson valley foie gras http://www.hudsonvalleyfoiegras.com/ every couple of months. He takes orders from friends and neighbors, buys enough duck and fg that they give us a nice discount and all the duck carcasses we could we want. We're planning a duck-off food competition soon...I make a mean smoked peking duck with scallion pancakes.

Duck and venison are my favorite meats. Problem is that they compete for the fall and winter menus at many restaurants and spring and summer are boring. I usually stick to fish in the warmer seasons.
