Gang, I completely neglected to mention Jambon De Bayonne.

yeh commercial stuff is crap here as well - always over dried. i make my own - i will post the method when i get home. i dont understand the science but it likes to be quite a dry atmosphere which means humidifiers etc arent required

The best is very freshly shaved from a whole piece made of good meat. I can devour an entire paper bag like that.

the best is putting a bag of that thinly sliced stuff on your dashboard on a warm day while on a road trip. the fat starts to melt and it becomes siblime

That's funny because that's exactly what I've done for years, and is what my uncle has been doing forever. It really is one of the greatest snack foods.
