I have also. The Tete de Cochon at Robuchon was absolutly sublime, as ere the Pieds de Cochon. I must admit that I have not searched brains out anywhere else, but pigs feet are a definite favorite of mine.
I like tripe sometimes. The easiest way to eat it is alla Napoletana, but there are some other recipes that are equally good if not better. I do not like tripe in Chinese food.
