I'm growing my hair out for first time in 8 years, I want to go with a medium length.

Yeah, it'll work fine. Your hair should be long enough in about 8-10 weeks, depending on how fast it grows. You're going to have to get minor trims as your hair grows so it doesn't look horrible in the middle stage. Show your stylist the picture of Pitt now and let them know that's the goal.
