In case it hasn't been mentioned, one of your flashlights should be a headlamp. I use a Black Diamond Spot but most any decent headlamp will do. If anything, it will make reading at night much easier than trying to use a hand-held flashlight.
The poster who mentioned the Fallkniven F1 and the Fenix hand-held has got things right. The F1 is one of the best economical choices for an outdoor knife. You want a fixed blade knife for the wilderness. As my survival instructor said, you don't want a knife that's already pre-broken (referring to folding blades).
Fenix, despite being made in China, is actually a halfway decent light. I've got six Surefires (made in USA) but I just picked up Fenix P3D and am loving it. I will see how Fenix performs under recoil (I am installing a Fenix TK11 on a rifle I am building) but if it performs like my P3D I will be very happy.
One last word: if you are going into an area without cell coverage, you may want to pick up a small FRS radio and leave it on the emergency channel. If you are injured or otherwise in need of assistance you'll need some method to call for help. The problem with FRS units is that their range is severely limited and I'm not sure if rescue operations still monitor the emergency channel for SOS calls. I keep my Garmin radio/GPS combo unit set to the emergency band when I venture into the backcountry and I hear people mis-using it all the time. But if your cell phone won't work, it's always nice to have a backup to summon help.
