Filet mignon

Fuck. Sfield was right. I cooked one tonight for the first time in a decade, and it is a lot tastier than I remember. I don't know that it is my favorite cut, but damn, when the quality is good, it is really nice. Now I have to rethink the rest of my life.

I like them fine and always thought the hate was overwrought, but I don't know when I'd choose one over a ribeye. I guess it's handy that they're smaller.

If you live in a crappy apartment (like me) and don't have a grill (like me), filet mignon is better than ribeye when cooked in a cast iron skillet using the Alton Brown technique. The fact that it's a thicker cut and more naturally tender outweighs the advantage of marbling when cooked in this fashion.

Evidently it's too mainstream and not nearly snob-appealing enough for foodie circles. While there's nothing wrong about it, per se, it's considered pretty safe and pedestrian by the cognoscenti. It's sort of like the Beatles of steak.

That said, I loves me the Beatles, and I loves me a good filet.

Its a girls steak. dunno, just doesn't have a lot of flavor, too lean. sure, its tender and its easy to cook without screwing up, just seems so unsatisfying eating it. in a sandwhich its not bad though.
