If a portion of the sole is ground down, don't they need to cut into the stitching? Or can they grind down enough and leave the thread intact? I'm wondering, since I may actually try and do this myself with a Dremel.

In theory, inlaid steel toe plates protect the sole and welt from wear. In practice I have found mine both noisy and unbalanced. Then again, mine were installed by Shoe Service. Never again. I usually wear new shoes for a while then have rubber sole protectors put on. Those on which I've done this never need to be torn apart for re-soling.
