Brisket with a Brazilian Twist

Dad did a couple of briskets up in Michigan on vacation. One he did with our typical rub and the other he used a Brazilian Beef Rub that he was really impressed with.

Here's a link to the write up and all the pictures. And here's what's going to have you craving brisket:





Oh, and did I mention the bacon topped beans smoked on the grill for 5 hours? How could I have left these beauties out?





And all this done on two really bad grills. One of which collapsed during the process!!

Do you always put your brisket in foil pans? Why?

Yes I do. Allows for the juices from the meat and the mop sauce to collect in the bottom and steam the meat during the process. This is my dad's recipe. In mine, after about three hours I drench with mop sauce and apply foil to the top of the pan so it steams even more. At that point it's not going to take on any more smoke flavor and will help to ensure a tender and moist brisket...

i want brisket sooo badly. but i dont have a grill. and the parks nearby only have grills that are open and don't have lids. can you smoke things on those?

Not really. You need a big metal lid to cover one of those grill. A ton of tin foil would work but it would look all jacked up when you were doing it and every time you had to add more fuel or smoke wood you would have to shred the foil...

is there anyway to make brisket at home. maybe in an oven?

Sure. Just no smoke flavor. Or you could try one of the indoor smokers that go on the stove. Steve Raichlen has book out called indoor grilling. You might want to check it out....

no exhaust system. -_- damn. i should ask around to see if anybody has a decent grill. i really reallyt really want some brisket after i read your post. nice, soft, succulent, smoky, beautiful pink ring.

Crock pot and add liquid smoke.
