A great way to serve warm small beets with whatever meat you have going is to roast them until done, say 40 minutes at 350, then peel them and wrap them in a foil papillote with a little butter and some salt and pepper. Just toss them in the oven before you start your meat and they will puff and steam, and the juices will mingle with the butter to make a nice sauce.

that does sound great. nice hit of black pepper, i think.
