How firm/soft should my roast beets be?

I like a little firmness in the middle... able to get a fork through, but a little resistance. I feel like most restaurants get them fully soft all the way in. Is it unacceptable to go a little firm?

I prefer them somewhat firm still.

if that's what you like, that's how you should cook them. i find that they're much sweeter if they're cooked thoroughly. that doesn't mean they're falling apart, but a paringknife goes to teh center easily.

Mine are that soft... I get a little "snap" if I fold a center cut in half. THey aer HUGE golden beets that were roasted in foil for a total of 90 min. @ 425. Probably should have done 450 for a little less time.

nah, with big beets, you want lower, longer. higher, shorter will give you real cooked exterior and undercooked interior.

IMHO it's hard to overcook beets. i love 'em. grew some monsters in my garden this year, nearly softball size. cooked them at 350 for about 90 minutes, turning a couple of times (wrap the beets in aluminum foil, don't peel). when they were done i slipped the peels off, cut them in dice and made a warm salad with blanched beet greens and some really good olive oil. little goat cheese, little walnuts... nice meal.

I don't like beets to have a crunch at all. Soft throughout.
