So, I decided over the weekend to see if I could do pulled pork on the Big Easy, Smoker, Roaster and Grill that Charbroil sent me to review. With a low temp of 375, I wasn't sure it would work so I cut a 3+ pound chunk of shoulder off an 8+ pounder and put the rest in the freezer.
Now for the disclaimer. I don't know if this would work with convection heat. Convection heat is where the heat source warms the air which cooks the meat but also dries it at the same time. Infrared or radiant heat heats the meat directly.
