A strong iced black coffee, like the one I'm having right now with the sun beating down my neck. I'm so tempted to flip up the collar, but I refuse to endorse that look.

That's a good one. I'd also vote for a slightly chilled cream sherry with a high proportion of Pedro Ximinez grapes. I get this at my local watering hole. It's the gustatory equivalent of being borne aloft on angel's wings.

I don't know if it's actually a digestif or an apperatif, but I like a Pernot with water on ice in a tall glass after a meal. On these hot summer days it's very refreshing and can replace desert.
