Pastrami on the Grill

My boy Arthur is at it again. This is his first non Latin recipe. The brother has mad skills on the grill. If you are a pastrami fan, why not try to make your own rather than buy it at the store? I promise that you will not be disappointed.

Here are the step by step, picture by picture instructions of how he did it.

Looks great. I like how the article mentions "The Hat". That's the place I think about when talking about pastrami sandwiches.

That looks like the greatest thing ever. That page has been bookmarked because I will be attempting that at some point soon. That looks like it would be perfect for when football season rolls back around in the fall.

No. Generally the same cut (not always) and pastrami generally prepped with a dry rub while corned beef is first brined.

If prepped the same way, then it's pretty close to "smoked corned beef", sure.

All of this comes from the brisket. If you put a rub on a brisket and smoke it you have smoked brisket not pastrami. Brisket has to be corned (brined) first before it can become pastrami.

I'm afraid that is incorrect. Pastrami is almost always brined. You "corn" the beef, which is done by placing it in a spiced brine for an extended period of time. You then dry off the corned beef, coat with a spice mixture and smoke, or in the case of the famous Katz Deli, steam, the corned beef to turn it into pastrami.

Fool, looks great. My only disappointment is you didn't corn the brisket yourself. Mild quibble to what looks like a stunning success.
