Pillowtop mattresses are designed to adjust to the way you sleep on them. They break in, just like a shoe breaks in to fit your foot. (And you would not want for the new shoe NOT to break in and adjust to your foot.)
After about a month, you will see form creases, called comfort creases, which indicate that the mattress is adjusting to the way you sleep on it.
If you want a top surface of the mattress that stays flat, perhaps you should consider a non-pillowtop mattress.
