Best smoked fish producers?

Foodguy must have done a tasting on this at some point. Any suggestions where to look for really high quality smoked fish? My problem is that it is always an impulse buy, therefore I buy something from the store where I am shopping at the moment. Suggestions please, especially for really good trout and sturgeon.

there's a guy down here who does great smoked fish ... french guy, former chef ... called michel cordon bleu (well, he's more of a technician than a great creative artist). he sells to ripert, etc. i believe some of his stuff is available mail-order.

Do you ever get to Chicago? I have a very interesting place to show you. I don't know if it will suit your Orange County tastes though.

i was unkind. i go kayaking in oc. the water's nice. also, my favorite seafood store is there.
