Being a vegan would suck harder than keeping kosher.

IMO, it goes:

I could easily be a vegetarian as long as it wasn't too strict.

I could too. I tried it for a few weeks when I was having some digestion issues, and it wasn't too hard. My dad has been one for ~30 years, but out of necessity rather than choice (gets violently ill if he eats animal proteins. Restaurant put real bacon bits in his salad once and he had to have his stomach pumped). He can eat eggs, so I think that vegetables + eggs you could do pretty darn well.
