Thanks Ron. Unfortunately I'm on a plane for Dallas tomorrow afternoon. Good call on Cochon. Had the pork belly and grits and the cochon with turnips and cabbage.

good food, nice folks. did you try the moonshine? i prefer it to most any cognac/armagnac i've had.

RE: The moonshine- they have several to choose from so I said I wouldn't mind just a taste... he brought out two in shot glasses. The first one was hot. This ain't your pappy's shine. The other was CatDaddy... rather sweet and not unlike the cognac you mentioned. Certainlyt not moonshine as in the we also use it to degrease the Farmall moonshine. This has vanilla, nutmeg something or other... flowery. Almost more like rootbeer?




Fried porkbelly with yellow grits, fig and goat cheese. I really liked how the fat of the pork was creamy and combined with the creamy grits. Otherwise I thought the goat cheese a bit odd and fig was nothing more than a garnish.



Cochon with cracklin's, turnips, cabbage and ham broth.

Cochon is great. I also want to try his other place, Herbsaint.

yup. it's cat-daddy. that's the one i remember. great stuff. almost more like a digestivi than a cognac. and no, i dont' think this is the stuff junior johnson was driving around.

Donald Link is the chef/owner. I'm pretty sure he opened it with Spicer as co-owners, but I think he's always been the chef. I don't think Spicer is involved with it anymore.

I ate there during Jazz Fest '03. I knew she had another exec chef there... the food was really great.

I like it better than Cochon. It's more refined.

I think that's a fair descriptor. Cochon clearly attracts a younger crowd looking for a more casual experience and lower prices. The decor is rather, uh, "Corn Crib Moderne"?
