"Gold sole" is rather an exaggeration. - It's a gilded sole, using gold leaf (a very ancient technique).

The gold is extremely thin and gets glued (shock. horror) to the chosen object. The result is very fragile so it gets used for objects which do not get handled regularly: carved picture/mirror frames or ceiling stucco.

Not sure what the size he is using in the video is made from, but the original gold leaf sizes were mostly water based...with gelatin, sometimes egg white. and / or fish glue being the main adhesive element. There's was / is even an oil based gold leaf size.

I don't understand...are you going to start gilding your outsoles? I seem to recall that you are an art historian. Couldn't really figure out why you would be so horrified about the sizing.
