Teach me about the ramen

1) What is ramen? Is it just soup and noodles?

2) Why is this so popular? I always used to think that Ramen came in packages and was a great lunch when you have little time.

3) What makes a good ramen?

Freshly prepared ramen noodles are good, but hard to find outside Japan. Some japanese restaurtants in the US specialize in ramen. The packaged stuff is OK if it's a decent brand, but I'm leery of the chemicals in the flavor packets. Only use half the flavor packet and don't drink the broth.

Packaged ramen and real ramen taste completely different. My favorite style of ramen is tonkotsu ramen, which is made by boiling pork bones, marrow, etc. for a really long time to create a rich, milky broth. It tastes absolutely amazing. Others prefer shoyu ramen (soy sauce based broth) or shio ramen (salt based broth), which are the more traditional styles, from what I understand. They usually put in chashu (sliced pork, most often the belly, I think?), bamboo sprouts, bean sprouts, dried laver, and half an egg to accent the dish, but of course, this depends on the restaurant you go to.

we don't have any ramen places here in stockholm but i've tried cooking the pork broth version a couple of times, takes a while cooking the broth but i usually do alot and freeze whats left, good to take out of the freezer and just add any stuff you have available when you feel for some ramen

I had some pretty damn good tonkotsu at Ippudo a few weeks back. Miles better than the slop they serve at Momofuku.

One of the first things I did when I went to cali was try real ramen. NY ramen...is just not good ramen :\\ I went to Daikokuya, which was the only one I could find with my limited cali experience, but from what I heard, it's not even the best there is...

I want to watch that again and then run straight to Ippudo. I think this will occur on Sunday.
