With Prime Rib tonight, my choices are:

1996 Burgess Cab
2005 Silver Oak AV Cab
2006 Chateau Pipeau (St. Emilion)

i'd go either burgess or pipeau -- though i don't know that one. the silver oak just seems really young. slightly related: i was at a conference this weekend and one of the winemakers there commented that he'd yet to have a glass of diamond creek that didn't hurt his mouth.

Somebody sent me an unsliced side of smoked salmon, for some unknown reason, so tonight's dinner (and probably tomorrows and Super Bowl Sunday) will be smoked salmon heavy. Not just by itself, but as a main player. What wines go well with this? Champagne, I imagine, but what else.

I always go with a Pinot with Salmon. Smoked, not sure...but I'd probably still go Pinot. When in doubt go Pinot.

Thanks guys. Didn't see your posts. I actually chose d) 2005 Clos du Val Cab. A little less $ than the Silver Oak. It was good.

i think it's actually kind of a tough match because it's usually so salty. i'd go with a rose champagne or a high-acid kabinett-style riesling. outside chance? and i know you're going to like this one: some chablis work really well.

Matt, problem solved. In the same spirit as wearing solid blue socks with everything. Just drink some wine from here with everything you eat.
