This is going to sound nuts. But I made some seriously great ribs over the weekend in 60 minutes. Well, actually I did it in 55 as I pulled them 5 minutes early. They were so good that I not only did them on Saturday, but again on Sunday. Although, cooking with the grill open in a rain storm extended the cooking time quite a bit, but that's another story. When it's 140 degrees outside like it was on Sat, they cook great in just one hour. And I realize this is a charcoal thread I and I did this on gas, this has sorta become the default Rib discussion thread. Here's the link to the write up which includes brining the ribs and more than 30 pictures of the process.

You are now qualified to be a cook at Chili's.

Doesn't sound nuts, I used to grill ribs "steak style". I would essentially sear them about 5 m inutes a side on a super hot grill, then put them to the side (still over direct heat, just less charcoal) and cover the frill for 35-40 minutes. Then just take them out and eat.
