I don't really temp ribs but just go by how they feel and look. In the upper left you can see a probe sitting in a clip and that's to register ambient temp inside the BBQ as I wanted to see what sort of temp I can expect from the smoke setting. Getting 180'ish on the factory default setting but I can change it so the temp will drop apparently and I'm hoping for a steady 160'ish for sausage smoking.
So I just bought a wireless thermometer. Two probes (one of which you see) and then one for the food. It's nice to be able to see the temps wherever you're at around the property. Here it is:
While I only used it for BBQ ambient today I recommend already. I think it's going to be great when I'm smoking sausages.
