also i always thought it was pronounced stage like stay-je, but the stage at momofuku ko told me it was pronounced stah-je

my short term plan is to now get a job and buy a meal at daniel with my signing bonus and eat a dish where mm prepped one of the 30 ingredients and then send it back saying the brunoise wasn't uniform enough
