HALP Gaiz! I need to cook dinner for a vegetarian :(

I don't want it to be too time consuming, so no pea soup out of the TFL cookbook, but at the same time i'd like it to be above the ordinary. Recs? Thx gaiz.

Oh and no risotto b/c I have no time to make stock between now and then.

Don't date a vegetarian...Been there, done that.

If it's your wife, more power to ya!

As far as your meal is concerned, try a bolognese with a bunch of hearty vegetables--mushrooms, eggplant, a ton of different tomatoes etc. I'm sure you can find a good recipe online.

i'm having a mental block on main course. All I can think of for vegetarian is pasta...

for a side, chicks love those little heirloom carrots sauteed in butter. i dunno why. make sure to leave the green stems on them, it just screams "heirloom".

God vegetarians piss me off. If you want to make life complicated and hellish for everyone around you, you should expect to not get invited to dinner.

Uhh, that would be vegan, not "fake vegetarian."

Fake vegetarians are people who don't eat red meat but still dig on chicken and fish. "Beady eyed" vegetarians as I like to call them. If it's got big, sad, doe eyes they won't eat it but if it's got those cold-blooded little eyes then it's cool.

I call those "cuteness" vegetarians. Often, they will eat the hell out of chicken and turkey, but a duck is way to cute to kill. WTF?
