A lot of large jets are definitely function over form. They'll all perform about the same speed-wise and with climb rates. From pilots I've talked with, the 757 and 767 are supposed to be pretty incredible machines, but I'm not sure what distinguishes them. Most pilots are about creature comforts (of which there are few in most planes) and the way the cockpit is layed out. Now when you get into the corporate jet and general aviation world there are definitely the favorites and desireables you see in cars. Taller guys hate Lear jets because they have really cramped cockpits. They're rockets though. Guys flying faster jets (falcon 50, gulfstream V, hawker 800) will hate on slower Cessna Citations (Slowtation). Corporate jets are the most interesting because you can see who has the real money and taste, just like with high end cars.
