Every time I buy fancy organic farm raised eggs, like half of them are unusable due to blood in the yolk or similar reasons. I can ignore a little imperfection, but when I'm using eggs raw to make mayonnaise I don't want it to have blood in it. I had to go through 5 eggs to find two that I could actually use. Two were bloody and one was disgustingly thick and, well, obscene looking. I don't want to, but I might just start buying regular Eggland's Best. At least they have some semblance of quality control.
