Not being able to cook white rice, yet any other rice comes out perfect. Also hate cooking any kind of chicken attached to a bone, for som reason tends to stay bloody. I guess I don't grab the concept. The harder the process the better I cook.

The harder the process the better I cook.

rinse white rice really thoroughly until the water runs clear. measure it and put it in a pan. add 125% water. bring to simmer. reduce heat and simmer until dry (about 17 minutes ... seriously). remove from heat and let stand for 5 minutes before fluffing with a fork (let's the rice cool and firm slightly ... retrogradation and all that).

honestly, when i was a beginning cook, i had a hard time judging chicken, too. when i'm doing a whole chicken, i still use a thermometer. for parts, it's easier. just pierce it and if the juice runs clear, you're good.

actually, oysters ship really well. just need to be kept cold (and any good shipper will do that). in the old days ... back when rube and i were starting out ... they used to ship them by wagon from the east coast to chi-town, packed in straw and ice.

I wondered about this. I do family history and had an ancestor who was a baker/restauranteur in a very small town in Iowa in the 1880's. I found some newspaper ads for his restaurant that advertised "Oysters served any style" and wondered how someone in 1880's rural Iowa would obtain Oysters that weren't poisonous.

Yes. I was assured they are packaged and shipped for 2 days of transit time. I better hope so. If I open a box full of 3 dozen dead oysters tomorrow, I will be quite sad. Not only because of my deterred culinary intentions, but because of the lost lives of all those poor, delicious oysters.

I can't find bayberries anywhere. Also, not being allowed to buy white wine for cooking because I'm underage is pure and utter bullshit.

That is bullshit. But I think you can buy ricewine at WF which is a small consolation. I think you could buy wine by the case from like Sokolin and other such retailers. Ask Kwilk for recs he'd be able to direct you to some examples that are cheap and really incredible values. Incidentally I think this is a cheaper way to get good wine anyways.
