I think it is a small fad, but its also advancement in materials used for longevity. I've have 5 different types of counter tops: formica - stains, no hot stuff, ugly as shit concrete - stains, chips, looks industrial and awesome, expensive engineered stone/cesarstone - kind of stains, pain to keep water marks off, chipped like a mo-fo, looks nice though marble - stains like a mo-fo, looks high-end, some chips, stains like a mo-fo (yes, I said that twice) granite - only stained a small area, never chipped, looked ugly I have a friend with burned granite, its black/charcol with a slight texture - its really nice. There are nice looking granites out there but they definitely go up in price. I've seen some really modern homes with a nice corian cut squarely, but corian doesn't have much "wow" when you know its corian. As for stainless - I'm really on the fence. Next fridge will probably be paneled or something smooth and glossy.
