It's an air of extreme informality even where it is inappropriate, accompanied by a presumptuousness that is almost downright arrogant. I find it odd that men were wearing tie w/o jacket unless they had brought it but were hanging it on the back of their chair because of the heat, etc. That strikes me as very 'fast food managerish'

I'm not particularly surprised at the informality, as I've seen jacket/polo, jacket w/o tie with dress shirt, etc, at Le Cirque, Per Se, and restaurants of such ilk. Sometimes you do see people wearing borrowed jacket/tie, which is amusing as well.

Unlike Seeger's and the Ritz, Baccanalia does not have wine baskets. I like their looks. Also, only about 1/4 of the waiters there know how to hold a wine bottle properly, so the basket remedies that problem. This was the first time they have had a sommelier, so he caught me by surprise. I do not know if he holds a bottle properly.

Oh Bradford, I almost posted something snarky about this earlier but I held it back. It goes back to an earlier thread by the OP, it may have been lost in the crash. Apparantly it's something his friends do. I'm sure the waiter took it away to have a good laugh with his buddies.

Some people sleep around; my wife and I eat around-4 good restaurants a week.
We do not have too much choice here, once you eliminate the chains, the hip "scene" places where the food is usually terrible and recognize that all Thai restaurants seem alike to me, as do most Indian and many Chinese, etc. We are forced to go back to all of the "better" ones once every 3-4 months, even if they are far from perfect, just to get some variety (and we keep hoping for improvement).

If seems that to be in an industrial district in an old warehouse and to expect people to be dressed up, is to invite disappointment.
